Occurrence of Savory

Savory (Satureja) includes about 40 different species. The Lamiaceae family originally comes from the Mediterranean region and Southern Europe. In Germany, it was introduced by monks from the 9th century onwards to cultivate it in monastery gardens. Therefore, the plant can also be found wild here and there in this country.

The undemanding plant genus prefers poor soils and is therefore found on fields and railway embankments. Warmth and sun suit it well, but it dislikes wind. Its occurrence can indicate calcareous soil.

It has a soothing effect on digestive complaints, as recognized by Hildegard von Bingen and later Pietro Andrea Matthioli in the Middle Ages. You can consume savory not only as a supplement with your meals but also as tea.

The herb grows as a subshrub reaching heights of 30 to 40 centimeters. Upright-growing stems branch out and bear narrow, dark green leaves. Delicate lip-shaped flowers in white, pink, or violet appear during the flowering period from August to September.
